I read something last night that really struck me in its profound nature. It was part of a larger segment, but it went something like this: “It was strange to feel the pain of my broken heart, and at the same time feel it’s openness. 🇬🇧 Aubergine patties yes please! Only 115 calories per patty 😱!!! Let’s get cooking:
2 small onions (or 1 big one)
1 slice of wholemeal bread
4 tbsp ricotta
Spices/herbs: 2 garlic cloves, handful of parsley, handful of basil 🌿, 1 tsp salt, pepper, oregano and italian herbs.
In a pan put the sliced aubergines and sliced onions and cook in 1 tbsp olive oil until soft. Once cooked transfer in a blender and blend well until you have a smooth paste. Add in all other ingredients (make sure you put the bread in a blender so you turn it into breadcrumbs) and mix well. Form your patties and put in the oven for 30mins at 200•.
I used mine as a burger on top of lettuce and hummus and topped with 1/2 avocado ✌🏻. You can use it as meatballs for pasta too 😉.
🇫🇷 Des burgers végétariens à base d’aubergines! Seulement 115 calories 😱 - aux fourneaux!
Couper 1 aubergine et 2 petits oignons (ou 1 gros) et cuire sur une poêle jusqu’à ce que ça soit tendre. Une fois prêt transférer dans un blender et bien mixer jusqu’à avoir une pâte lisse. Ajoutez y 1 tranche de pain complet (que vous passez préalablement au blender pour réduire en miette), 40g de parmesan râpé, 1 oeuf, 4 cas de ricotta, poignée de basilic frais et une poignée de persil frais. Assaisonner de sel, poivre, origan et herbes italiennes.
Au four 30mins à 200•.
J’ai mis mon burger sur une tranche de pain burger avec du hummous, de la laitue iceberg et 1/2 avocat pour finir en beauté ✌🏻

Today I’m mixing business with pleasure. 🙌 I’m heading into London with Momma JEM to finalise plans at my wedding venue with our florist, and while I’m killing 45 mins on the train I’ve got to write an epic blurb for a book you’re all gonna know about VERY soon. 🧐 😳 #secretproject It’s gonna be stinking hot in the city 🥵 Oh, and the secret project you’re all gonna know about soon is stinking hot too 🤭 Have a fabulous Tuesday, all!
basking in the sun with this sweet lil plate of pancakes & tropical fruits because if you close your eyes whilst eating it, you actually teleport to a wee sandy beach on a tropical island - amazing experience, can’t wait to eat & go back again, 100% would recommend to a friend 🏝
For da pancakes:
🥞3 egg whites
🥞1tbsp sweetener or sugar free syrup
👉🏽whisk together until stiff peak forms
🥞30g coconut flour
🥞10g ready brek
🥞1tsp sweet cinnamon
🥞100ml almond milk
👉🏽stir these into the egg white mixture until the batter is smooth
👉🏽spray pan with frylite & place on medium heat
👉🏽using a spoon, dollop 4 dollops of mixture onto the pan & cover with a lid for ~3mins
👉🏽flip the pancakes & cook for a further 2min

🥜5g peanut butter powder
👉🏽mix with a smidge of water & drizzle over pancakes
🍯5g maple syrup
🥜mini sprinkle of flaked almonds
